Our mild local Canola honey brings out strong feelings in our customers! Floral tones of lilac and rosewater create a bright, almost candy-like burst on the front of the tongue, with the deeper base notes from the canola flower lingering on the palette. Harvested from hillsides in the Sacramento Valley area where farm fields are covered in canola flowers.
Like all of our pure, raw, organic honey, Canola honey is locally sourced and unfiltered. It is one of our more easily crystallized varieties. Crystalized honey only happens to honeys that haven't been pasteurized, heated, or filtered. Give it some gentle low heat (like leaving it in a warm car or direct sun) and it will begin to liquefy again. It also has low water content, which can make it very thick, better for spreading than pouring.
Pair Canola honey with green olives or drizzle as a topping to pesto pasta right before serving for an unexpected kick. It is great with sourdough pancakes or biscuits.
