Honey in Coffee: A Barista's Guide

Raw honey in coffee transforms both. It adds sweetness without masking the coffee's character. It adds textural complexity — honey doesn't dissolve like sugar; it suspends and coats. And it adds nutrition coffee alone doesn't have.

Why Honey Works in Coffee

Sugar dissolves instantly, creating sharp sweetness. Honey incorporates slowly, creating layered flavor. You taste honey's floral notes alongside coffee's roast character — they interact rather than compete.

This is why our barista program exists. We make 36oz bottles of raw honey designed for coffee operations. A single squeeze of raw honey into a latte, cappuccino, or americano changes the drink entirely.

The Technique

For espresso drinks (latte, cappuccino): Add honey to the espresso first, before steaming milk. The heat helps it incorporate slightly, and the honey mixes into the espresso rather than settling at the bottom. One to two tablespoons per drink.

For drip coffee or Americano: Add honey while coffee is hot. Stir slowly — you're not looking for complete dissolution, but suspension. The honey will partly dissolve and partly remain suspended, creating texture.

For cold brew: Honey doesn't incorporate well into cold liquid. Either heat it slightly in water, or add to individual cups when serving warm.

Which Honey to Use

Raw honey has more character — floral notes that interact with coffee. Processed honey (heated, filtered, blended) tends to taste one-dimensional alongside coffee.

Our barista bottles are raw, unfiltered, and sourced from single apiaries so each batch has distinct character:

  • Spring varieties — light and floral, doesn't overpower coffee
  • Mountain varieties — more robust, pairs well with dark roasts
  • Hawaiian varieties — unique floral notes, interesting with medium roasts

Pricing & Supply for Cafes

Our 36oz barista bottles are designed for commercial use. Cost is approximately $12–15 per bottle landed, depending on variety and volume. A single bottle services 15–20 drinks.

Cost per drink is roughly $0.75–1.00 for honey as an ingredient — comparable to other premium syrups, but the actual honey is raw and local.
